Weekend Recap [V.30]

Welcome to the LAST Monday of July.. 
That is so weird to say and it came and went so fast! 
I remember a month ago saying I didn't want July to fly by because I didn't want my sister to go home and now I am going on two weeks since she left. 

On a side note 148 days until Christmas 

My weekend went by fast as usual. Why is it that the weeks go by so slow and weekends fly by?

Friday
I spent the day working and doing homework. I got my workout in and for a treat for completing my 5 miles 4 of 5 days this week we got fruit bars. 

Friday night we went out to celebrate my friend who is home for the first time since last Thanksgiving when he left for boot camp. We will NEVER go back to the bar we went too. It was over priced & rude bouncers and people. 


Saturday

I took our friend back to her car. Went to best buy to get Alex his new phone and hung out at home. 

Morning after 


I honestly have no idea what Alex was watching... but yes we were already in bed by 7:20pm - lame Saturday night!

Sunday

I was back at my workouts. I am 6 lbs away from reaching my 10 lbs down by aug 15 & now that I am thinking of it, it's more like 15 lbs down!! woahhh I can't wait to hit my goal.  


For losing the  first 10 lbs so far, I ordered focus T25 to give it a try! 

The rest of the day was spent doing laundry, cleaning, making banana peanut butter bread {recipe to come} & homework as I officially finish the class today at 4:30pm I meet my teacher for final grading.

You are 70 days away. I am so ready for you. 

Dear Weight Loss,
Thank you for being friends with me. We have officially lost 6 lbs but 17 to go until I can learn to maintain. I am loving this new life style and loving the fact I found something that works

I love you. I loved waking up to thunder and than it randomly started raining

Dear Savings Account,
I promise to rebuild you soon. Sometimes life gets crazy and we need it but the good news is we are almost debt free. Not sure what is better, being able to say I am debt free or I have so much in savings #brokegirlproblems 

Dear Weekend,
I am ready for you. Ready to be home and clean and relax - not to mention I WILL be making Banana Peanut Butter bread (recipe to come) 

Dear July,
You have flown by. Thank you for being a fun month

It's Finally Thursday

^^^^This is me every day after I complete my 5 mile walk/run one day I will be able to do it all & not feel like dying


It's been awhile since I have done an It's okay Thursday post and because I am just slammed & I know you all throughly enjoy my post.. 

Here you go.. 

It's Ok 

...I agreed to work at the preschool tuesdays & thursdays until E man starts kindergarten 

...that I am slowly losing the weight I have been talking about for months

...that I am exploring healthier eating options 

...that for once it is NOT Africa hot in San Diego 

...that we leave for the birthday/anniversary cruise in 71 days 

...that I have quit shopping 

...FINALLY today is Thursday

...that I haven't been getting my usual comments anymore on the blog (maybe need some more material to write about)

...I am thinking of a new recipe for next week to post 

...that I want to continue to blog but just not sure about what 

...that I miss my sister 

...that I am officially done with summer school come Monday 6pm 

... that I am ready for the weekend

Skinny Enchiladas

Craving Mexican food but yet don't want all the calories from the restaurant?
I have the BEST and PERFECT recipe for you for the most amazing enchiladas from Kelly over at Eat Yourself Skinny
I love the new look and all of her recipes. I  have yet to try something and not like it! 

Skinny Enchilada 
Please feel free to change it up if you'd like but know all the credit for this goes to Kelly at Eat Yourself Skinny 

For the sauce:

2 cloves of garlic, minced
1 can diced green chilis
1-1/2 cups tomato sauce
1 tsp. southwest chipotle seasoning (Mrs. Dash)
1/2 tsp. ground cumin
3/4 cup fat-free chicken broth
Salt and fresh pepper to taste

For the chicken:

1 tsp. vegetable oil
2 chicken breasts, cooked and shredded
1 cup diced onion
2 cloves of garlic, minced
1/4 cup fresh cilantro
Salt
1 tsp. cumin
1/2 tsp. dried oregano
1 tsp. southwest chipotle seasoning (Mrs. Dash)
1/3 cup chicken broth
1/2 cup tomato sauce
8 (6-inch) reduced carb whole wheat flour tortillas
1 cup shredded low-fat Mexican cheese
Nonstick cooking spray

DIRECTIONS: 
In a medium saucepan, spray oil and saute garlic.  Add green chilis, chipotle seasoning, cumin, chicken broth, tomato sauce, salt and pepper.  Bring to a boil.  Reduce the heat to low and simmer for 5-10 minutes.  Set aside until ready to use.

Preheat oven to 400 degrees. 

Heat the vegetable oil in a medium skillet over medium-high heat.  Saute onions and garlic on low until soft, about 2 minutes.  Add chicken, salt, cilantro, cumin, oregano, chipotle seasoning, tomato sauce, chicken broth, and cook 4 to 5 minutes.  Remove from heat.

Spray a 13 by 9-inch glass baking dish with non-stick spray.  Put 1/3 cup chicken mixture into each tortilla and roll it.  Place in baking dish seam side down.  Top with sauce and cheese.  Cover with foil and bake in the oven on the middle rack for 20-25 minutes.  Top with scallions if desired and enjoy!

How I do it: I make mine more as a casserole. I lay 3 whole grain/whole wheat tortilla down and spoon the chicken mixture onto it layer with cheese. Make another layer of tortillas - pour the sauce and layer with cheese than bake. 

I did brown rice and broccoli & cheese as sides & no good Mexican meal is complete without an ice cold beer

Guess Whose Back

It's Monday & weird to think we only have ONE more Monday left of July.. 
Where is 2013 going? 
I know it's been awhile since I've been here but I am back hopefully in full force. 

My weekend was wonderful and exactly what I needed.
A weekend at home catching up on things around the house and finishing my online class strong. 
Next Monday is my binder check & I am done until middle of August

Friday
I got to see one of my long lost best friends. She has been very busy with her new job. It was good to catch up & have lunch together. 
I got my workout in. 
As you might know I am on a mission to lose 10 lbs (or more - true goal is 20 lbs before October 4) before August 15 
Thoughts on this? I have already lost 4 lbs & loving it!

  Friday night was spent hanging around the house with the hubby. 

Saturday
I walked 5 miles with a friend who is also trying to lose weight. Than came home and was unmotivated to do my Saturday workout of Chalean Extreme so the hubby joined in to make it fun! 

After workout it was time to run some errands to Best Buy to replace hubby's broken screen and Bed Bath & Beyond. 
We got a George Foreman grill and these adorable mini loaf pans for mini banana bread & meatloaf 




Also I found my newest addiction to Starbucks - The berry refresher mixed with the Valencia refresher 


After we got home. It was time to make dinner
Skinny Enchiladas, brown rice, broccoli & cheese & an ice cold beer. 



We all deserve some indulges sometimes when trying to lose weight right? 

Sunday
I finally slept in until 830. 
Finally did laundry 
& got my workout in because NO ONE has time for REST days. 


After workout it was time to head to costco & home to play catch up for my week. 
I have another busy week ahead of me

Failure to plan is planning to fail

Get It Right.. Get It Tight


It is that time of year again.. well it seems it is ALWAYS that time of year where we all workout extra hard to get in that swimsuit shape. 

The never ending cycle of working out. 

Remember back in the day when I used to do Jillian Michaels 30 day shred - No longer am I doing that as I was not seeing the results I wanted.. Had to change it up! 

I know I am on that motivation again since my birthday/anniversary cruise is just 87 days away and I will be in a swimsuit for better part of the 8 days in the Caribbean plus eating lots of yummy food  - I do NOT want to gain more weight on this cruise like I fell victim to last time! 

For the next 87 days I will be working hard and trying to eat cleaner than I normally do! I truly want this to work.

What am I doing you ask?
I am doing Chalean extreme

3 days weights - 2 days cardio - 2 days of rest + one shakeology shake a day = sexy body here I come! 



The longest workout is 45 minutes. It is truly the best for a busy mom, busy person, someone who wants to workout but can't devote hour + to the gym.. I was that person! I finally had enough & got my butt in gear! 

Anyone can do this! There are modifiers with no impact & you can push yourself each time to do more & more. 

The best part - You do a different workout EACH day. You can't get bored!

Weekend Recap [V. 27]

I feel like I haven't posted in forever.. 
Oh wait it has been awhile & I am sorry about that! 
Life just is NOT slowing down for me and it won't probably until Month when summer school is out, sister is back in Minnesota and I will be back to working like I used too. 

How was your LONG weekend

My weekend was GREAT

Wednesday night
We had a midnight trip the the ER for the doggy! :( I got home to a mess of blood all over the yard and after 5 hours of not being able to get his ear to stop bleeding we took him in.

4th Of July

We went to my aunts for a little party and a good times with friends. 
The pictures are priceless. 



Thant he drunkenness happened & we had a bright idea to make a beer bong..
yet we had NOTHING to make it out of put a pool noodle & water bottle for a filter 





Friday
We were home relaxing and trip #2 to the ER vet for the puppy. He managed to get his bandaid off and his ear was bleeding AGAIN


Than we went out to our local country bar with my little sister and TOTALLY forgot to take pictures. 
It was fun. 

Saturday
we stayed home all day. I did my summer school homework.
It should be illegal to make a 16 week class crammed into 6 weeks. I am in over my head with homework. 
Than we decided to take E-Man to see Monsters University while Alex went to see the Kevin Hart thing. 

Really cute movie & E man LOVED it. He even threw his hands up in the air! 

Sunday
Got my nails done. Did some costco shopping & hung out relaxing.. 

This week is another short one for me as we are beach camping Thursday - Sunday!
I am so excited to lay out on the beach for 4 days in a row!!

Overall my weekend was very very eventful and this week is jammed pack too!

Poppin' Disneyland

I love Disneyland.
It is so much fun to just go for the day and forget about the things I have to do at home.
We did just that last Thursday!!

I took my friend Amanda who is from Iowa & has NEVER been to Disneyland and my sister. We had a blast! 
I can proudly say Amanda is in love now too!
We have already planned to go back in September as our passes expire than.
