TEAM WAFFLE || Low Carb Recipe

Good Morning ya'll! I know I said I was going to share this on Waffle Wednesday but I got super busy from the moment I was awake to the moment I went to sleep.

This coming weekend is a special one for me and it's taking a lot of pre-work to get it all together. (More on it next week)

I have been posting my waffles over on instagram and lately a lot of people have been asking me how I make them and how I keep my carb count so low in them.

I am here to share my secrets with you just in case you missed it on insta.

Ingredients

  • 1 whole egg
  • 1 scoop of protein (Depending how I am feeling that day depends on which protein I use, mainly my go to for low carb is PE Science Snickerdoodle. I have Vanilla, Reese Peanut butter & Cookies & cream coming today, I will get back to you on those)
  • 1/4 cup of unsweetened almond and or cashew milk
  • 20-25g of kodiak cake mix (lately it's been the peanut butter crunch, you probably can skip this step and really keep the carbs low)
  • dash of baking powder
  • dash of vanilla
Directions:

Warm up the waffle maker (this is key) Mix all the ingredients together. Spray waffle maker with cooking spray (I use coconut oil spray from Trader Joe's) and cook like a normal waffle.

Sometimes I keep it a little longer since I like the brown and crunchy to it.

My mix usually makes two (a small one and a larger one. I have not perfected the making yet)

Top with whatever you like!

I usually top mine with Walden Farms syrup (I have all 3 flavors, strawberry, blueberry and regular & I have the caramel sauce in the bottle that looks like the syrup) Than if I am feeling frisky, I top with truwhip and enjoy!

I am totally Team Waffle! Are you Team Waffle or Team Pancake?

CAVE TOOLS

It's almost summertime in San Diego, which also means lots of BBQ and pool time in my future. The pool means swimsuit season is creeping up on us. Anyone else freaking out a bit about the swimsuit part? I know I am!

As most of you know, I am on a fitness journey. I am counting my macros (Fat, Protein & Carbs) and I eat within a certain range for each. This means lots of protein and I typically go for the chicken. I eat it with almost every meal.

Thank you to CaveTools , I am able to cook my chicken and know exactly when it is done thanks to me digital thermometer . My old thermometer was a non-digital one and sometimes I swear it was off by a few degrees. Also, the other trick was to take a piece of chicken (usually the fattest one if I forgot to pound it all to the same size) and cut it in half to make sure there was no pink anymore. I know, call me old school!

I love that this has a large digital screen and nice easy buttons to use.

It is super simple to use. Even the Kiddo can figure it out. I had him use it to check dinner the other night.

Also, because so many of us use amazon prime, it's on there as well for a great price. You can find the digital thermometer on amazon here, for 15% off your amazon digital cavetools thermometer, use code LH58KB66

A digital thermometer is one of those gadgets you don't realize how much you use it until you have one than it's like how did I ever live without it?

*I did receive the thermometer for my honest opinion. All opinions are my own*

Some Quick Life Updates

Picture overload.. Some of them are super random & really have no reason to be on here besides I do what I want..

hey look Liberty photobomb me... silly kitty (It'll be 15 years since I've had her.. crazy)

Crazy to think we're already in May of 2016? Where did the first 4 months of the year go? I swear it was just New Years and I was talking about my word being fierce since I suck at making goals.

Here are some life updates:

++ Well, with that said, if you've been following me along on instagram, you know I've been on this fitness journey. I can proudly say I have lost 12 pounds and have kept it off.

Thursday after upper day // if you are in San Diego & looking for an awesome gym and or want an online coach, let me know! My coach is amazing and he does both online and personal training plus we have an amazing gym.

++Hubby has been gone now 2 months, well a little over, honestly I have no idea exactly how long. We still have some time too until he's back home but we're surviving one day at a time.

++ Work is work. I am still wanting to quit the preschool but it's so hard when it's your aunt but I have some serious baby fever and I know when I get prego I will quit, so maybe Baby G will be joining us sooner than later.

++Gym life is great! I am loving all my workouts and even thinking of doing some more at home. I mean I own everything but a squat rack currently so why not try it out at home too?

I did participate in a virtual run & can't wait to do the run for the Heros

++ I am totally team Waffle lately, just check the instagram. I am also learning snap chat (j3ss1ca13) add me there!
I went to Sushi with the girl I used to workout with. I sure miss her in the gym and our chatty times but I am so thankful we can still meet outside the gym and have grown such an amazing friendship.

my dinner cheats

I hardly ever drink anymore, but I will say this stuff is pretty dang amazing!

and every now and than I just crave a Dr. Pepper from the fountain and because macros are life, I get a Diet Dr. Pepper from McDonald's for 96 cents!

Lastly, my new favorite energy drink. It's pretty amazing and it's champagne flavor. #winning

Really, nothing much has been going on, just day to day stuff. Work, gym, sleep, repeat. Since it's May, I am going to try to get back into blogging. Also, add me on instagram & snap!

Make sure to come back Wednesday, I am planning on sharing my amazing #teamwaffle recipe and I promise ANYONE can make them!

Happy Monday Ya'll!
