Protein Pumpkin Spice Muffins


Do you love pumpkin? Do you need more protein as most of us do? These muffins are made for you! They're so seriously delicious. It's hard to stop at just one. They are also  super easy to make. 



Ingredients:

2 cups old fashion oatmeal 
1/2 cup protein powder (I used vanilla flavor) 
1 1/2 tsp baking powder 
1 tsp cinnamon
1 1/2 tsp pumpkin pie spice 
1 tsp salt 
2 large eggs
1/4 cup sugar free syrup
1 cup pumpkin puree 
1/2 cup unsweetened apple sauce
1/2 cup unsweetened almond milk
45 grams of white chocolate chips 



Directions:

Preheat oven to 350 degrees. Spray a muffin tin with cooking spray. 
Combine all ingredients in a large bowl and mix well. 
Divide mixture between 12 muffin cups evenly. 
Bake about 20 minutes than start checking to make sure not to over cook
Enjoy warm or cold. 




As many of you know I am doing IIFYM , therefore all my ingredients were measured out on the food scale which is where my macro breakdown is from to make the 12 muffins. I would highly recommend food scales to anyone to learn about portions and proper eating.

Friday Letters


Dear Friday, I couldn't agree more. We always say it sounds like a great idea to go out but than reality hits and bed is just so amazing. Also, I rather watch dateline & 20/20 with the hubsters even though usually we are asleep these days by the time they come on. We have a busy weekend, so Friday night is most likely going to be spent in bed early.

Dear Hocus Pocus, I am so excited you were on. I recorded you so I can watch you this weekend. Bring it on! Bed + movie = perfect 

Dear Readers, Thank you for hanging around these parts this week. I am going to try to get on a schedule for when I post, I am thinking Monday, Wednesday, Thursday (just to link up with Kelly) & Friday .. Hopefully I can do that. I really do miss blogging but sometimes I feel like there is nothing to blog about. 

Dear October, you can slow down anytime. I can't believe you're almost over already! I hope we start to get some fall weather so I can wear some sweaters and jackets. 

Dear IIFYM, I am finally taking you serious as I have about 230 days until I have to be in a swimsuit so I am hoping to make some good progress. I am hoping to start blogging about you as I feel it would help me in this transition. Also, the food part is getting pretty easy now that I have been sticking to it. Let's now do it on the weekends and we'll be good to go! 

Dear Fitness Pal, I am really thinking of upgrading. Is it worth it? It seems like all the cool kids are doing it so it might be worth it. I will wait and see what my numbers look like and if I can lose some weight. 

Dear Alex, I love you. Thank you for being my peanut butter to my jelly. I am excited to spend the weekend at home with you. Also, spend Sunday back to where it all started. I am so looking forward to it all.

One Of The Seven Wonders

Cancun was amazing. They are not enough words to describe it and I would highly recommend it to anyone who asks. Stay at Secrets the Vine when you go, I promise you'll thank me later. 

Before I review the hotel , let's chat about how I celebrated my 26th Birthday though, ever since my 23rd birthday right before we got married I decided I NEVER wanted to spend my birthday again at home. So each year since than we've gone somewhere. Cruise to the Caribbean, Catalina Island and now Cancun.  

While in Cancun, We, well I decided I wanted to spend my 26th Birthday at Chichen Itza. It was probably one of the best ideas I've ever had. Chichen Itza is now considered one of the seven wonders in the world. It's HUGE! 

We booked the trip through the hotel which was very easy and I loved they took credit cards so the bank did all the conversations from American money to Pesos for us. 


We got the nice big tourist bus as it was a LONG bus ride out there. They broke the day up into exciting things. We stopped right outside to do some shopping, spent a few hours at Chichen Itza, a lunch buffet, than a swim in the cenota before heading back to the hotel. 

Our bus picked up other people from different hotels, they provided a small breakfast and beers and water on the bus.

Alex has gone on vacation so many times waiting to see one of these guys and we finally got to see him. He had to get pictures right when we walked in. 


The famous temple. Our tour guide gave us the full history lesson on how they built it. This one represents the calendar. December 21 last year wasn't end of the world, it just meant that history would repeat itself. Mayan people believed the world starts over after so many years. It is amazing how they built something so detailed back than that explained so much. 


Story time: We asked a couple to take a picture of us in front of the ruins. Alex made a comment about there will be two poses and as usual I was confused and just brushed it off. We took the first picture and I looked at him like what's the next picture? 


Next picture: He re proposed with a right hand ring! I was laughing so hard because we were already married and everyone kept saying congratulations. How do you say thanks but we're already married? I couldn't of asked for a better birthday present! 



Leave it to me to find the dogs living there. 


This is the Venus ruins. and our Mayan tour guide, all mayan people are really short. I felt tall standing next to them and I am only 5'3 



This is the game field. They try to put their 2 pound ball through those holes kind of like basketball. The winner than gets sacrificed for their Gods. 


The back side of the ruins. A guy who bought the land from after the ruins were built decided he wanted to use the stones to build his house and started to destroy the back side of the ruins. It's crazy how much he took and crazy to see how much detail went into building these ruins. 


So we left Chichen Itza engaged again and ready to eat some Mayan Food! 



Have you ever been to Chichen Itza? It's a must when you go to Cancun or any where near it!

Boo Ya'll

Hello Monday, 
Hold the coffee, I have showed up again on this blog. Woah, I am even impressed. 

The weekend went too fast as always but it was good to spend a weekend back at home even though I do miss Cancun. I am loving San Diego finally cooled down to a brisk 75 which is amazing. I could finally wear boots, pants and even a sweater, but instead I broke out my plaid shirts. 

Friday: We didn't do anything actually. I met up with a friend to walk our trail by my house than we were in bed and asleep before 9pm. I know we party hard, but it's what happens when you're up at 5am and go non stop until you hit the bed. 

Saturday: I had to buy new tires for my ride. I went to go get a tire fixed and sure enough my tread was so low & one of my biggest fears is a blow out on my tires so new tires it was. It was cheaper to buy 4 new tires than 3 of the ones I had before. Not to mention, last time I bought tires was January 2013 he said so I would say it was pretty good. Than it was back home and was super lazy. Than my step sister had her baby shower. It was Halloween themed. Super cute idea if I am ever prego during October and having a baby shower. 

Shirt (Sold out) but she has tons of other cute Halloween shirts & leggings from Ollie Marie 

Ollie Marie is going to make me broke, I love ALL her stuff. Everything is great quality and at a great price. And since I went through my clothes while packing for Cancun and got rid LOTS of stuff since I no longer fit into it and if I do lose the weight I probably will want new clothes anyways.  

Sunday: It was back to meal prep, grocery shopping and cleaning. I scored at Costco with 4.5 lbs of Kodiak Cakes for only $11.99 



and I even manged to change the menu board since June 


Overall, the weekend was great. I was tired by the time I got into bed last night and this morning came too fast. Here we go Monday, Let's do this! I got some big dreams to keep chasing and things to do.

Friday Letters



Dear Friday, I am so happy you are here. This week has been rough since coming back from Cancun. I hope next week is easier back to reality.

Dear Cancun, I miss you already. I missed you from the moment we landed back in the USA. Can I just pack up the dogs & go back? It was absolutely amazing. Plus, I loved spending the week with the hubby knowing he didn't have to go to work.

Dear Hubby, We celebrated 3 years of marriage. Someone people wouldn't of guessed we'd make it this far. I can't say it's been easy but it's for sure been worth it. I am excited to see where the next 50 years takes us, hopefully on lots of vacations to see the world & some babies sooner than later. I love you!

Dear Work, You suck! I wish I could get paid for staying home and taking care of the house/animals. How do I do that?

Dear Blog, I miss you somedays. Some days I am so glad I am not on here. It's a mean world out there but I decided I want to come back as a full time blogger meaning Mon-Wed-Fri probably with hopefully some extra stuff. So Stay tune. I am not exactly sure when, maybe the 1st of the year to start fresh. I love fresh starts.

Dear Holidays, I can't believe how fast you are here already this year. I am not even close to being ready but I am ready for some colder weather and long pants.

Dear California Weather, You suck! You are drunk go home! Any moment I am ready for winter weather. This humidity, heat and whatever else we are experiencing can just disappear please. I have so many cute leggings and boots I want to wear.

Happy 3rd Anniversary!




Happy 3rd Anniversary hubby! I can honestly say the year sure has tested our strength but I think we are stronger than ever. I know I said that last year on our anniversary but I truly believe it this year. We've overcome some big struggles but so glad we did! Our trip to Cancun was amazing to celebrate us & spend time with just us. It was our first vacation of just us and I couldn't be more excited about it. I know I joke about it but I truly loved it! Thank you. Thank you for always being so loving and supportive. Always remember I love you more and more as each day goes by and I love you more today than I did the day we got married. There's lots more I could say but it sometimes better kept short. I love you!!

Back From Paradise


I am back from paradise. 
It was so beautiful and amazing.
I am already planning my next trip back! 

I am planning on doing a full review of our hotel (I loved it) & sharing the great week in Cancun. I just need to finish loading all the pictures. Until I do all that, back to work & reality I go as I am trying to catch up on everything.
