Remember a few weeks ago I said I was going to share some new recipes I have tried.
Well here I am sharing the goodies! I hope this becomes a regular thing. I love cooking but even more so I love baking so hopefully I can mix up the too and share the goodness from the kitchen.

Since the weather is FINALLY cooling off and we hit the holiday's, I turn to warmer dishes.
First on the list, Vegetable soup!
Doesn't sound appealing, I promise you'll thank me later.
Ingredients
- 2 tablespoons butter
- 1/2 cup chopped onion {maybe a little more if your like me and love onions}
- 1 cup finely chopped carrot
- 1 celery stick {I skipped this because we didn't have any in the house}
- 1 tablespoon minced garlic
- 4 cups chicken broth
- 2 large baking potatoes - make sure you peel and chop
- 1 tablespoon of flour {you might need a bit more depending how you like your soups - I like them thicker so I added more flour}
- 1/2 cup of water
- 2/3 cup of milk
- 2 cups of chopped broccoli {like the onion, I love broccoli so I added closer to 4 cups}
- 2 cups shredded cheddar cheese

I added a cup of pepperjack cheese as well
Directions
- Melt butter in a large soup pot
- Add onions, carrots and celery
- Allow to saute over medium heat until tender to taste
- Add garlic and cook 1 to 2 additional minutes
- Add chicken broth and potatoes
- Bring all to a boil and cook until potatoes are tender as well to taste {this could take up to 30 minutes depending how you cut your potatoes- remember smaller the piece the faster they cook}
- Mix flour with water and add to pot
- Lower the flame to a simmer until soup is slightly thick {depending how you like it}
- Add milk and broccoli
- Finish cooking until broccoli is also tender to taste
- Soup should be heated all the way through. {Be careful when tasting to not burn your tongue}
- Stir in cheese {any cheese you would like}
- Allow to melt completely
- Serve with your favorite toppings
