Morning Glory Protein Muffins

I realized I need to work on my food photography!

 I wish my brain could think of something this awesome. The original recipe is from a wonderful site called Dashing Dish. If you are looking for clean eating yet very yummy recipes, I would HIGHLY suggest  this site. I can't wait for her to come out with her cookbook but until than I made my own of her recipes.

Please say Good Morning to Morning Glory Protein Muffins
{no I didn't make this up - but I am giving you the exact way I made them}



Ingredients
1 3/4 cup Old Fashion Oats
1/4 cup of protein powder { I used Vanilla} 
1 cup of sugar 
1 tsp baking soda 
1 1/2 tsp baking powder 
1 1/2 ground cinnamon 
1/2 tsp salt 
4 egg whites
1/2 cup of unsweetened apple sauce 
1 cup of crushed pineapple in its own juice {DO NOT DRAIN} 
1 cup of grated carrots 
1/2 cup of shredded coconut 

Directions
Preheat oven to 350 degrees
1. Place all wet ingredients into a food processor or blender. {I used the vitamixer} 
2. Than add the rest of the ingredients besides the coconut.
{Place the wet ingredients first will help blend everything together} 
3. Blend together until everything is smooth. There should be no chunks of oats or any other ingredient. 

4. You can spoon in coconut. 
I added coconut & mixed on speed 1
5. Line cupcake tin with liners. I sprayed them with pam to help make it easier for them to get out.
{The last few muffins I have made stick to the paper}
6. Pour an even amount into each muffin 
7. Bake about 30-35 minutes & test with a toothpick 
8. ENJOY

I added a little extra of everything therefore I had extra so I made about 24 mini muffins as well. 
They are so good, my family ate the mini muffins before the day was over!! I can't wait to make them again.
